Please forgive me if this has been covered in another post, I completely understand how to double clutch and what it does but what is the end product resulting in an increase of performance and why is it so important?

Also what is the difference between a factory and a performance clutch?

performance clutches feel very heavy due to the need to hold more power coming from the engine, they are stronger and less easy to wear down.

this makes them hard to live with if you use the roads more than the track.

double declutching allows for engine speed to meet transmission speed when equal, i.e. when cornering very fast and you change gear, it needs to be extremely smooth not to upset the balance of the car as that will result in spinning backward into a tree, and allows power to be maintained.

Thats the key. Double clutching allows for smoother gearchanges and can be just as fast as standard changes when you get good. You really need to look into Heel and Toe for trackdays though - see the article in the articles section on this for more information.
